Oak & Eden is a Texas whiskey company founded in 2017 by Joe and Jamie Giildenzopf and Brad Neathery, built around a patented method of finishing whiskey inside the bottle. Every bottle holds a five-inch spiral-cut piece of toasted or fired oak, which the brand calls a spire, and the brand says the spire rests in the whiskey for at least six weeks before release. Wheat & Spire, introduced in 2019, is the brand's wheated bourbon. The mash bill is 51% corn, 45% wheat and 4% malted barley, so wheat takes the place rye normally holds, which keeps the spirit soft and sweet rather than spicy. It ages in new American oak barrels and is then finished in the bottle with a French oak spire. Oak & Eden chose French oak here because its tighter grain and more porous structure add a silky texture and gentle spice that suit a wheater, and retailers describe the result as vanilla, caramel, toasted grain and candied fruit with a clean, warm finish.
