Ransom Bourbon is the first bourbon from Ransom Spirits, the Oregon distillery and winery in the Willamette Valley foothills better known for Old Tom Gin, The Emerald 1865 Irish-style whiskey and its sweet vermouth, all made on a hand-hammered, direct-fired French alembic pot still under master distiller Matt Cechovic. Rather than wait a decade for its own stock to mature, Ransom built this as a blend of bourbons distilled in Oregon and Indiana, with components aged two, three and twelve years, and says it will move toward fully Oregon-distilled whiskey as its barrels come of age. The mash bill is a four-grain recipe of 66% corn, 23% rye, 6% wheat and 4% malted barley, aged in charred American oak and bottled at 44% ABV (88 proof). The distillery's notes describe classic bourbon aromatics, toffee, soft caramel and sweet corn, a honeyed mouthfeel and a zesty, rye-forward finish, and The Whiskey Wash's reviewer found cinnamon, nutmeg, cedar and sandalwood over spiced fruitcake with orange oil and lemon verbena, calling the mouthfeel excellent and the spice just the right punch. Ransom's own serving suggestion is a Manhattan built with its sweet vermouth.
