Sonoma Bourbon is the flagship whiskey from Sonoma Distilling Company, the Rohnert Park distillery Adam Spiegel founded in 2010 in Sonoma County, California. It was originally released as West of Kentucky No. 2 before the brand was simplified, and it is a wheated bourbon built on a mash bill of 70% California corn, 25% California wheat and 5% Wyoming malted barley, all non-GMO grain the distillery mills, mashes and ferments itself. Distillation runs through old-style handmade copper alembic pot stills heated by direct fire, and the spirit goes into American oak, including smaller-format cooperage, for a minimum of 15 months, with most of the blend drawn from barrels older than two years. It is bottled at 46% ABV (92 proof). Sonoma describes it as toasted vanilla, almond, toffee brittle and coffee, and retailers who have tasted it add Cracker Jack, sweet cornbread, cedar and sandalwood on the nose with dark chocolate and vanilla fudge on the palate and a brisk, lingering sweet finish.
