Taconic Distillery is the Hudson Valley farm distillery Paul and Carol Ann Coughlin founded in 2013 on Rolling Hills Farm in Stanfordville, Dutchess County, New York. Double Barrel Maple Bourbon is the distillery's limited autumn release and a collaboration with Catskill Mountain Sugarhouse: the sugarhouse ages its maple syrup in Taconic's used bourbon barrels, and when the syrup comes out the distillery refills the same barrels with its aged straight bourbon, made from a mash of 70% corn, 25% rye and 5% malted barley, and lets it soak up the maple for several months before bottling non-chill filtered. The standard version goes out at 45% ABV; this Barrel Strength bottling skips the proofing water and lands at 115 proof (57.5% ABV). Taconic describes a copper-to-dark-amber color, a nose of butterscotch, maple syrup and vanilla with deeply candied fruit, a palate of vanilla and caramel with delicate maple sweetness on the back, and a warm, peppery finish where the maple lingers; The Whiskey Wash found sweet maple with vanilla, orange candy and a little barrel smoke. Not a flavored whiskey, just a bourbon that shared its barrel.
