Tequila 512 is the Austin brand Scott Willis started after a trip to Tequila, Jalisco; the first bottles reached Austin in 2012 and Nick Matzorkis bought the company in 2020. The tequila is made at La Cofradía, NOM 1137, a family-operated distillery in the lowlands around the town of Tequila, from 100% blue Weber agave grown seven to ten years. The piñas are roasted in brick ovens, the juice is fermented in open tanks with wild and cultured yeast, and the wash is distilled three times in pot stills, then charcoal filtered for 24 hours and oxygenated. The Añejo rests 13 months in oak barrels that previously held bourbon and is proofed with spring water to 40% ABV (80 proof). The brand describes it as sweet with a peppery body and a slight mango finish; Thirty-One Whiskey found brown sugar, vanilla, herbal agave, lemon and cayenne on the nose, agave and cayenne up front with black pepper behind, and a cayenne, pepper and vanilla finish that gets spicier over ice. The 2015 Blanco won Double Gold and Best in Show at the San Francisco World Spirits Competition; the Añejo is that spirit with a year of bourbon wood on it.
