The Butterfly Cannon is the tequila brand of Elwyn Gladstone, the founder of Malfy gin, under Mark Teasdale's Biggar & Leith, named for the monarch butterflies that migrate from the US to Mexico, with the brand funding the Monarch Butterfly Conservation Fund and habitat projects in Mexico. It is made at Destiladora del Valle de Tequila from 100% blue Weber agave harvested by hand at seven to eight years old and cooked in steam ovens. Rosa is the brand's pink grapefruit tequila: Mexican pink grapefruit peel is soaked in the silver tequila, the infusion is combined with pink grapefruit and a grapefruit distillate, and the result is filtered and bottled at 40% ABV, the same strength as the unflavored Cristalino rather than the lower proof most flavored tequilas drop to. It comes out with a rosy color and a light grapefruit flavor sitting on top of the agave, which makes it a paloma that needs no grapefruit soda.
